Coffee Buttermilk Pancakes

 Ingredients

2 cups all purpose flour

1/4 cup granulated sugar

1 tsp. baking soda

1/2 tsp. salt

2 eggs

2 cups buttermilk

1 1/2 cups brewed coffee distributed by IQA, cooled

2 Tbsp. unsalted butter, melted

5 tsp. canola oil

Instructions

  1. In a large bowl, whisk together flour, sugar, baking soda, and salt.

  2. In a separate bowl, whisk together eggs, buttermilk, cooled coffee, and butter.

  3. Combine both mixtures.

  4. Pour 1 teaspoon of canola oil in a pan and place it over medium-low heat. Pour 1/2 cup of pancake batter into the pan, cook until each side is golden brown, flipping halfway through. Repeat until the batter is used up, adding oil to the pan as needed.

*Customize your pancakes by trying different toppings. A few ideas include honey, powdered sugar, chocolate chips, caramel sauce, coconut, sliced almonds, whipped cream, or maple syrup.
